Ingredients:
Spiced Tofu Filling:
1 block (14 oz) extra firm tofu, pressed and cubed
1/4 cup olive oil
2 tbsp lemon juice
1 large garlic clove, minced
1 tsp maple syrup (or plant honey)
1 tsp ground coriander
1 tsp smoked paprika
1 tsp cumin
1/2 tsp cardamom
1/2 tsp turmeric
1/4-1/2 tsp cayenne (to taste)
3/4 tsp salt
Tomato Cucumber Salad:
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 red onion, finely chopped
2 tbsp olive oil
1 tbsp lemon juice
Salt and pepper to taste
Fresh parsley or cilantro, chopped (optional)
Pickled Onion:
1 red onion, thinly sliced
1/2 cup apple cider vinegar
1/2 cup water
1 tsp sugar (or maple syrup)
1/2 tsp salt
Optional spices: 1/2 tsp peppercorns, 1 bay leaf
For Serving:
Pita bread or wraps of your choice
Optional toppings: hummus, tahini, or additional fresh herbs
Instructions:
Prepare the Pickled Onion:
In a small saucepan, combine the apple cider vinegar, water, sugar, and salt. Add optional peppercorns and bay leaf if using.
Bring to a gentle simmer until the sugar and salt dissolve. Remove from heat and let cool.
Place the sliced red onion in a jar and pour the pickling liquid over it. Seal the jar and let it sit at room temperature for at least 30 minutes, or refrigerate for a few hours for deeper flavor.
Make the Spiced Tofu Filling:
In a large bowl, mix together the olive oil, lemon juice, minced garlic, maple syrup, ground coriander, smoked paprika, cumin, cardamom, turmeric, cayenne, and salt.
Add the pressed and cubed tofu and gently toss until the tofu is well coated with the marinade.
Heat a skillet over medium heat and add the spiced tofu mixture. Cook for about 8-10 minutes, stirring occasionally, until the tofu is heated through and slightly crispy.
Prepare the Tomato Cucumber Salad:
In a medium bowl, combine the halved cherry tomatoes, diced cucumber, and finely chopped red onion.
Drizzle with olive oil and lemon juice, then season with salt and pepper to taste. Toss gently to combine. Add fresh parsley or cilantro if desired.
Assemble the Wraps:
Warm the pita bread or wraps in a dry skillet or microwave for a few seconds until pliable.
Spread a layer of hummus or tahini on the wrap if using.
Add a generous portion of the spiced tofu filling, followed by the tomato cucumber salad and pickled onions.
Roll the wrap tightly, folding in the ends to secure the filling.
Serve:
Slice the wraps in half and serve with extra pickled onions or a side of your favorite dipping sauce.
